Domaine Hudelot-Baillet Bourgogne Pinot Noir, 2023 firefly hollow P(ear) it with a spicy100% Pinot Noir from within the village of Chambolle Musigny. The wine is made from vines that are about 25 35 years old. The grapes are entirely destemmed and very carefully extracted, to highlight Pinot's wonderful fruit and aromatics, especially Pinot from Chambolle. Pair this with roasted halibut over poached pears and leeks, or mild cheeses like Brillat Savarin or Vacherin.
