Domaine Yves Boyer-Martenot Bourgogne Aligoté, 2021 stowe persistent bubbles resolves in aThis wine is made of 100% Aligot. The grapes come from 40 plus year old vines in the village of Mersault. Calcium carbonate rich in clay limestone soil helps the grapes maintain moisture and acidity, perfect for a juicy Aligot. The juice is fermented old barrels for 1 year, and in concrete eggs for 8 more months. Textured, with juicy tropical fruit and minerality. We would pair this with tonkatsu, either over rice or sandwiched with a cabbage slaw
